Barbecued Toothfish Parcel

Serves: 1
Time to make: 5 minutes prep - 20 minutes cooking
Ingredients
1 medium sized Toothfish fillet
small knob of butter
salt and pepper to taste
Sprinkle of cajun seasoning
1 teaspoon lemon juice
To serve
Pita bread
Salad vegetables of your choice
Shredded lettuce, sliced tomato, onion
Method
  1. Make a double foil 'plate' and place the Toothfish fillet in the centre - foil keeps the fish intact, locks in moisture and helps the heat distribute evenly.
  2. Season with salt, pepper, Cajun spice and lemon juice
  3. Place butter on top
  4. Wrap parcel and seal firmly
  5. Simply place on the back of your barbecue over a steady heat (not a raging fire) for 20 to 30 minutes or until the fish is no longer opaque in the middle.
  6. Remove from heat and keep warm until ready to be devoured. The foil will retain the moisture and flavours so no risk of it spoiling.
  7. Lightly toast pita and slice the 'pocket' open
  8. Load with the fish and salad and enjoy
Tips

When looking for some quick and easy alternatives for the non-meat eaters at your barbecue, you can't go wrong with this recipe.

Alternatively you can pop the foil parcels in the oven (180 for 20 mins) to cook in advance then warm through on the barbecue when needed.
